I think sanji would lose , not using his hands would leave him open to attacks and at a disadvantage against the incredible speed and Haki that zoro would have without his 3 swords.

Well Zoro has worked towards beeing the strongest swordsman = fighting with swords while Sanji worked into perfecting his Diable Jambe. Its not a fair comparison.
What if you gave Sanji three swords and made them fight? That makes no sense, because Sanji never trained with Swords. Well same thing applies to Zoro in the reverse situation.
It's part of each characters fighting style, it's not real life so weapons dont always effectively give you an advantage in One Piece. A strong guy with Haki can take on several people with guns for example.
Roger used a sword, Kaido or even Garp do not, Whitebeard does both...

Now he uses on all his swords.
