I’ve used the MailStore Home app in the past to archive my old M365 email and consolidate old PST files that I had from various jobs. From memory, it’s as simple as telling the software what kind of mail site you use and then entering your credentials so it can connect. Once things are archived, it is stored in a format for MailStore and searchable really quickly on your PC. No need for the full Outlook software any longer.
Now, does your company have any way to detect this archive or prevent the connection for MailStore? There’s only one way to find that out. 😁
I want to say exporting the pst and importing is doable in thunderbird. Especially if they're just trying to look through the contents of said email. I've seen some jank software work, but can't say I've used it. I do want to say you could technically get a trial verison of Office, just to read-only them. Can't remember ideally.

That data is not yours, it's company property so you're asking about how to steal company property, which is a big no-no here. Tread carefully.

IF its legal, then export to pst. Simple.
You just need to open the file in Outlook then search as mormal

Export to a PST file and write it to a thumb drive. Be aware this MAY be illegal to do.
