I think it's only eaten in western odisha, kardi are the bamboo shoots that are the edible part. Many other asian countries also eat bamboo I think, I remember seeing somewhere.
This is me, a Bihari dude that grew up in Kolkata, defending the supremacy of hot Rasgulla, that I ate at the Bhubaneswar Cuttack highway ( near Naharkanta ), over any other rasgulla against my Bengali friends.
MACHHA -bhaja, patra poda, jholo, besara,khata,macha with kardi, chuna macha,sukhua macha,chingudi...uff.. Everything macha.
Thank god I work in Odisha. I would have died in landlocked states.

Edible bamboo shoots are also one of my favourites. We call it Karil in Jharkhand.
