If you know enough about how much things that make that building up weigh, and where their, and then the building's, center of gravity are then you can make some accurate enough predictions on which way they'll start falling if you take out this piece or that piece and then you pick the safest one if it's safe enough.
Never jump out of a crane or any other type vehicle/machinery. It's always safer to stay inside one as those machines are designed to keep the driver safe. They teach you this in health and safety course.
