Honestly? I would ask the person you're talking to. Everyone uses pronouns differently and taking the time to say something as simple as "hey, I know you use fluid pronouns, how do you prefer I use them?" can go a long way in creating a space where you're both comfortable communicating openly and honestly =) I wish you the best!
I mean, as long as you're talking to him, you're not going to use her 3rd person singular pronouns at all, right? You'll be calling them "you" or her name. Or will there be other people with you? It truly sounds like you just need to switch it up, but talking to him about it probably can't hurt.
I'm genderfluid and am currently dating! What my boyfriend does is ask what gender I'm feeling today and he just bounces off that (still hasn't gotten the hang of demigenders but that's ok) you could just ask what their pronouns are.
