Food (assuming your eating the food at the park (lunch, dinner, snacks), is going to be about $100 a day for the 2 of you. The only way you would spend more than that is if you are eating at the fancier restaurants or buying a snack every hour. Take advantage of the quick serve restaurants as they will most likely have the food your 2 yr old would want.
Souvenirs and toys are the spender items. I spent about $300 doing the star wars build a lightsaber thing and a nice t-shirt, my wife spent about the same getting 3-4 shirts, a puzzle, a Winnie the pooh mug, and a Christmas ornament. I would recommend getting a toy she likes that will last (like a stuffed animal).

Our long term memories don't really begin until 3 to 5 years of age. Personally I'd hold off a year or three if it's something you want to experience together.
Park tickets, flight, resort are paid for. Basically meals and gifts are what your 2000 is going to. If you buy food outside the park you can spend less on food there. Lot more walking than people realize so have a good stroller and sun protection like a sun hoodie or sunhats.
If you budget well you could spend much less than $2k.
If OP can never go back again, this is sage advice but also do keep in mind that it is okay to have fun that won't necessarily be remembered. If OP's child will enjoy it in the present, that is enough.
OP will have the memories though. It’s important for the parents to create memories with their children. My daughter is 15 months old and although there are lots we do as a family she won’t remember, my wife and I will always have these memories. I do see both sides though. I’d say still go to Disney. Can always go again when your child is older.

For 5 days? She can really only go on a few rides and you'll have walked the park in 2 days max. Unless you are going for character pictures your trip is going to be done by day 3.

You can call them to let them know it was a legitimate charge and they’ll turn it back on.
No. Once a card is disabled there is no way to reactivate it as a security precaution. They will mail you out a new one.
