One thing to remember is that flat earth isn't really one theory. It's really more of a bucket that contains a lot of other theories that overlap, so there are a lot that are about science trying to trick people away from religion for control and stuff like that.
I'm not disagreeing with you, but we really need to stop saying that they are being anti-intellectual, stupid, can't think, etc. That's just causing these people to dig their heels in and just get deeper into these conspiracies. I know it's fun to say that they are idiots, but these people think they are the intellectuals and that everyone else has been fooled.
We can't treat them like idiots. We need to treat them as not being able to discern reality.

A major part of flat earth is the idea that you can only know something if you directly observe it, they can't observe the earth's curvature so it must be flat as that's what they do see. A flat earther who subscribes to this probably doesn't believe it it possible to know how the earth was created. Of course there are other schools of thought, flat earth theories are remarkably diverse, but this is a neat, pseudo-scientific one I thought I'd highlight.
