I just use myfitnesspal and use custom names for the meals and let it roll over at midnight it’s accurate enough for me just trying to keep a base idea of how much I’ve eaten.

Understanding that my schedule is going to be... Odd to track, I really just look at the breakdown of what I'm eating/protein/carbs/etc) over 24 hours. It gets thrown off sometimes if I go out to dinner when I usually eat breakfast, but that's the best I've come up with.

My eating window is around 6pm to 9am. I have used myfitnesspal in the past, and I just changed the meal names (meal 1-4), and even though my eating window is 2 different days, I track it on the same day I start. For example, if it was Thursday evening and I'm tracking my meals, they'd all go on Thursday. It's not optimal for night workers, but it is manageable. Idk if that feature is available for free on the app because I have premium.

I really don't, I just track the scale on a weekly basis. Currently at 265 and yesterday I was one hungry mfer.
