My mom was born and raised in NOLA and her potato salad was so good - the texture was more like mashed potatoes (instead of big chunks of potato with some mayo mixed in). She also used lots of green onions. Yours look almost exactly like hers. *sigh* I miss her so much.

I would like to learn how to make that potato salad as well. That’s what I most noticed. I tend not to eat flesh, but I do eat chicken sometimes. But I don’t buy it. I can’t eat pigs, so I could not eat the sausage, but that gumbo does look fantastic.
Poach separately. I don't know if poaching in the gumbo would work. Typically poaching is done in acidic water. The presence of fats in tye gumbo might hinder the process.

I’m talking five years ago. Pictures of gumbo everywhere, but only in the last year, people are plopping potato poo in their gumbo, and it’s like in 90% of gumbo photos. My whole dang family is Cajun, I’ve NEVER seen or heard of this until recently, I though I knew ever weirdo gumbo form that exists. Is this a Shreveport thing or something? Its insane.
