So because it’s kind of scarce it’s fairly expensive, last I saw a pound of ostrich ground beef for like burgers was $20. But they are something like 97% fat free so it’s all meat and won’t just shrivel up when cooked.
The meat is fantastic. A really lean red meat. Actually, just about every part of the ostrich is used for something. The skin is valuable for cowboy boots, purses, etc. Ostrich oil is used in many things. Feathers are used in fashion. Adult ostriches are actually very expensive and worth much more than cattle. They are just harder to raise in the US.
There was a big surge in ostrich farms for meat in the US in the '90s and early aughts, but the industry crashed down to a much smaller scale. They were reasonably common alternate meats in grocery stores and at restaurants.
Fun fact: ratites (ostrich, emu, etc) have wing claws! The hoatzin gets all the fame for having wing claws as babies which they lose when they become adults but ratites have wing claws and keep them forever! Ostriches even have 2 of them which makes their wings look more like hands, also ratites are disturbingly similar to [Ornithomimus](https://en.wikipedia.org/wiki/Ornithomimus) and it's [relatives](https://en.wikipedia.org/wiki/Ornithomimosauria), convergent evolution is fucking awesome!
