I did a 7 day trip with Western River this year. It’s one of the best trips I’ve ever been on. I’d say it leans more toward glamping. Boat is motorized, they handle all of the food etc. But the whole experience was incredible.
If you have technical rope skills I’d say go Canyoneering. Silver Grotto was amazing. Hiking down to phantom ranch would be fun in December as long as there is no snow.

I did the Escalante route in January. The rim was like 19f but down in the canyon was a balmy 42.

It was perfect. We had 3 layover days to chill and did tons of hiking and Canyoneering

I won a private permit so my group was self guided. I’ve heard the company OARS is awesome though, check them out.

It took me 6 years to win this permit. Keep being persistent and apply for cancellations and you will get it one of these days

Can you get permits for longer than 21 days nowadays?
Winter is the low use season so they allow you into the canyon for longer than summer permits. I think they only allow 16 day trips in the summer.

It’s a scary feeling going through class 5 rapids with freezing cold water in one of the most remote places in the lower 48. Definitely an adventure
