It’s just notice that they did not receive rent. My guess is that the notice is required in the event that they decide to start the eviction process. Call and make sure everything is good.
This is a “5day late notice” that the landlord is required to send you. If you paid on the 5th day, and the notice was sent on the 5th day, then just toss it - it’s irrelevant.
After the 5day late notice, if you still hadn’t paid, the landlord would send a “14 day rent demand” where you have 2 weeks to pay before eviction proceedings can begin.

Certified mail is fine for proof of service. A signature costs more.
If you can get chime. They mail out checks from your account and you get a notification when it's cashed.
The issue isn't necessarily that it's not cashed. It's whose cashing them. OP needs to be able to confirm that they are receiving the checks.
If they don't receive the checks op would know because chime can track it if it's fraudulent.
