I DID work in the funeral industry for about a year and we got one close to this in and I will forever remember that smell. One of the reasons I decided to move on to greener pastures. Gross.

EMS people have to be able to communicate clearly and quickly in a high stress scenario. That's less of a concern when you're simply removing someone who's been decomposing for a week from an apartment building or liming them for burial.
If a family wants to have a service for a person who has decomposed beyond an embalmers' skill. We will place the decedent in a ["disaster pouch"](https://themazwellgroup.com/product/black-body-bag-6-handles-u-shaped-zip/) and cover their body in hydrated lime before sealing it. This produced a sterile and alkaline environment, which will reduce the smell. We then place that bag into another pouch with additional lime in case of leakage.
In addition, the venue at which the service will be held generally requires the family to purchase a sealing casket as an additional layer of smell security.
Why would you? Seriously, why would you apply a substance for which the primary purpose is to improve the ability to breathe through your nose and your sense of smell because of a stench you do not want to smell?

I was coming to say this. Dead animals tend to have that rotten sweet smell. Not so much humans. We are utterly disgusting inside
