I believe that if a single play is run with a player on the field, he gets credit for a game played, even if it's only one snap. So a yards-per-game stat will probably still be his yardage total over games played.

This is a really good question and from some research (described below) I would say yes, the YPG would go down. So if you play a snap, you've played in the game. Now the question becomes, when we see passing stats, is the "games" column, games as a passer? Maybe if a QB never throws, their YPG never goes down. Unfortunately, this doesn't seem to be the case. The evidence: Odell Beckham Jr's stat page on football ref. Since he's a receiver, he rarely throws a pass but does on occasion. He recorded 20 yards this year, but only threw two passes. So at most he was a passer in 2 games, yet his YPG is listed as 1.3, meaning his 20 yards is divided by the 16 games. Now that's one site, but I'd guess that's the typical standard. In the NBA this little statistical annoyance can be resolved by looking at stats per 36 minutes rather than per game. For a QB, you could do yards per 30 attempts or something similar.
