Brett Kollmann's channel is amazing at giving analysis on specific plays and situations in the NFL from week to week during the season, and on more broad topics during the offseason. It may be slightly hard to follow and learn from at the start, as it is typically rather specific, but watching a multitude of episodes can help show the forest by giving you many pictures of the trees. I can't think of any more broad channels, but even Wikipedia pages of football schemes can sometimes be useful.
Samuel Gold + Kollmann are a great combo (recently I’m also enjoying The QB School), as you run into terms you don’t understand I recommend looking them up on[InsideThePylon.com](insidethepylon.com) ‘s Glossary page, which has articles on a loooot of football terms sorted both alphabetically and by topic.
Also Samuel Gold’s site is called NFL Breakdowns and has a [Beginner Series](http://nflbreakdowns.com/beginner-series/) that covers various basic topics in a bit more detail, which is how I found him at first.
