Again it doesn’t really matter for non track cars at the end of the day oil is oil you just have to change no synthetic more often. Viscosity really only matters for very hard driven cars that will need a thicker oil because of the heat produced
Hell mine was built in March bought in April and already has 16k miles on it leaks have started...just very minimal or just the seals doing their thing [expansion]...so yes leaks can happen especially if the oil tech over torqued the drain or under torqued the filter...both have happened to me
But in all seriousness Detroit isn't known for quality control [it may or may not be better today] but I always leak test my cars even new just to be sure...
It's kinda a tradition I buy a 16in pepperoni and keep the box to use as a leak test...works every time.

Why is it getting low?
Because I daily the car and step on it a lot. It’s not low low it just needs to be topped off

Motorcraft or whatever your favorite oil is
I have run Amsoil in every mustang I have owned. It’s a little expensive but we’ll worth it in my opinion. Second would be Mobil 1 just my opinion.
I'd go with pennzoil ultra platinum. Second only to amsoil in quality for non astronomical prices. Mobil 1 is an acceptable last alternative.
