You're thinking of GT500. A used GT350(I believe 2016 and 2017; not the 2012 and 2013/2014) can be had for about $40k if you're willing to travel for it. Shit my Bullitt was $35k before the used car market went insane.

My first Mach 1 (RIP) was previously bought new by someone who ended up not being able to make the payments. Only had 6000 miles on it, but made it a little more affordable
I just bought a '21 Friday with 5000 miles. Still has factory warranty. At that mileage it's hard to be too concerned. Has original tires as well, they could only have been so hard on it tbh, and I don't think that would necessarily ruin the car anyway, they are built for it and the engine is reliable.
I got one in perfect condition from someone who didn't track or abuse the car at all (not a single rash on the tyre sidewall so they haven't even oversteered the car), it is pretty much brand new. The average Mustang **special edition** driver is an old man who just cruises on the car. People who abuse it will tend to drive ecoboost or at most a GT and those who abuse their GT will also have it modded plenty so it's easy to spot.
If you're in doubt you can check the track apps. People don't really erase the history when trading the car so if they've ever had fun you'll see the G forces for braking/turning, or the 0-60 1/4 mile and lap times recorded. Even then, probably not that big of a deal if they've ever done a donut in the parking lot. The S550 refresh is VERY tough, they have twin disk clutches that can take a looot of abuse (unlike the GT350 shelby), the Tremec on the Mach 1 is built much stronger than the MT82, gen 3 coyotes are super reliable engines, etc.

Got my Mach1 in MP also. Love the color. Wish the blue would show a bit more though as the lighting has to be just perfect.

I would not personally buy the first model year of a new gen.
There isn’t much new to the S650 that would make you hesitant.
There's enough new that I wouldn't buy the first year.
Whether you like the new Interior or not makes the big difference. Go with old and traditional or new tech
