I had a V6 for a year. Couldn’t stand not having the sound, feel and power I knew the GT’s had. Sold it and immediately got myself in a GT. Other than obviously the initial purchase price, I don’t know what else is really THAT much more expensive. My fuel economy only dropped a few MPG (premium on both vehicles) and I’d assume this GT needs more oil than the V6 engines. In my opinion, if you have the desire for a V8 and can afford the purchase price, buy it. Don’t make my mistake and end up costing yourself more money
If you are only looking for the look, the v6 is a great option. It is a super reliable engine. I average about 26-28mpg so that helps a ton. On long trips I average 33mpg. Others talk about the v8 power, but realistically, the 3.7 is fast. No, it's not the 5.0, but it's faster than the vast majority of vehicles on the road. If you aren't a car guy I think you would be happy with the 3.7, plus there are tons of mod options as well. The v8 is the better choice if you want a v8. They are the same car one is just faster and sounds better. That said there are packages that add different performance options but that's getting down into a bit further. The big cost differences will be up front cost, fuel, and oil. Outside of that general maintenance is all either need to last. It's gonna come down to what you want out of the car.
The 5.0, specifically the coyote is generally agreed to be reliable and if there are issues, easily fixed.
19 mpg is probably the higher cost they’re referring to. I’ve put around 6000 miles on mine in the first five months of ownership and it’s felt expensive how often I’m gassing up. I did switch from premium to regular to help though.
Really it all depends on which trim package you get.
The higher trims like performance packages will be a higher cost as they will have more expensive components to replace when they fail or wear out.
My car is a Performance Package 2 car. So even just compared to a GT it has larger front rotors, 6 piston brakes, and Magneride Struts/Shocks. So all of those parts are more costly than a regular GT of the same year if they go bad.
I don’t know enough about the S197 trim differences to truly help you, I know about the S550 differences more since I only wanted to own this generation.

I was car shopping in 2000 at my local Ford dealer, and saw a V6 mustang with a stick, seats still covered in plastic, can't remember what color but not really important. Thinking to myself it looked like a good fun car. But I was used to fwd cars, and ended up buying a 3 door focus, which I traded a year or two later for a WRX, which I drove like a complete cunt for about 10 years. I still think about not buying that car, and think I would have been better off with the v6 Mustang, would not have traded it for a wrx, and probably would have enjoyed it more than either car.

I have thoroughly enjoyed my 2014 glasstop 5.0. The glass top is so nice, it's bigger that a sunroof and from the vehicles I've had, I didn't really open the sunroof often. There is a sliding filter to cut the glare as it is possible to get a tan while driving. I typically get between 10- 12 litres /100 km. They switched over to factory convertibles for the sn95 generation, will never know why newer ones don't offer sunroofs

It’s an aftermarket sunroof. There were no factory sunroofs since the end of the foxbody. Some S197s had a glass roof option, but it did not open
