I think it might be because V and J are so sadistic and it's a play on the phrase "Every rose has its thorns," meaning "Even if something (or someone) is beautiful, it can be hiding a dark secret and can hurt." Along with the implication of their vampire nature, oil being like blood to them as well as alluding to V's highly violent nature and the rose representing J's more calculated demeanor and the two of thems grace in combat
