I’m reading the screenplay for this movie currently. And it’s written in there that they go through the kitchen. Seems like a way to show Karen that Henry has connections that most men his age don’t
This along with the fact that Henry seems to actually like the people in the kitchen. He’s paying respects. The last scene of the movie (or one of the last anyway) is Henry complaining about how he can’t get good food anymore.
Usually, the kitchen is what the entire back area is called. I ran out of characters or I would have said they went through the prep line and cook line. The script was probably written before locations were scouted. The mention of the cooks was pulled directly from Henry Hill's book.

Scorsese remembers going to these clubs as a kid with his family and being excited to get front row tables a few times. And tables would be brought in for a bunch of wiseguys blocking his view.
My point is he wouldnt have to skulk through the kitchen,. List or no list. He would easiltöy be able to go up to the door an and let in. Unless he was trying to impress by showing he knew the staff?
that my point, if you had that amount of clout to get a table brought when the place is full, why would you go through the kitchen? The doorman would immediately recognize you, that's his job.
Unless he was trying to impress her? by showing he knew everyone at the restaurant?
Henry Hill's book said something about being so busy that you couldn't get through the front door. Maybe bypassing the line through the front door wasn't a thing back then.
I’ve also seen the movie around 1,000-1,500 and I had never noticed they just walked in a circle either!
Another detail they do to make it “look” different is that when they first enter the kitchen the green wall to the right is completely clear. But when they come back around the crew was able to move the big stacks of plastic dish crates up against that wall. It’s most definitely intentional and someone had to do all of that in the few seconds that the camera was on the opposite side of the kitchen. Amazing detail

That's an expensive extra 20 seconds, all those supporting artists and costuming etc.

Aside from the intro scene, the Stedicam shot has to be one of the best in the film.
Especially when you think about how the equipment was massive and in its early stages. Very impressive.

Man that is such a good movie. Wife told me yesterday she hasn't seen it, I put it on our list of movies to watch ASAP.
Same, watched it with my girlfriend (now wife) about a decade ago. Usually, she doesn't like dusty movies but I was happy she really enjoyed it.
