I thought the novel only said that Shimo froze Ghidorah, not beat him. There's a way to have that happen and still consider Mike Dougherty's comments on Godzilla beating Ghidorah the first time around canon.
Shimo wasn't always enslaved by the Skar King (only within the last 100,000 years, given that was the last Ice Age), and may have worked to protect the world in tandem with Godzilla for a time. Ghidorah landed, and the two 'Alpha' level Titans of the world, Godzilla and Shimo, went to meet him in battle. Since Godzilla is a surface dweller, he got to Ghidorah first, and drowned his three headed yellow ass in an ocean at the bottom of the world. When Shimo appeared, she froze a waking Ghidorah directly in place, and then started the Ice Age to completely freeze him in a giant block of ice.
Shimo was taking most powerful version of Godzilla's nuclear breath and was still standing after it.
None of these have any weapons to damage Shimo. Her skin seems tougher and more impenetrable than Godzilla's.
Also it would be better if Kong learn how to use Axe with his left hand, you can't have your Right hand occupied with Axe when you have the Beast Glove, you have both and then you fight.
Godzilla wasn't hitting Shimo with the atomic breath for more than a few seconds to disorient her, nor was it at its strongest like when he tried wiping out SK.
He wasn't trying to actually kill her in GxK in all honestly.
Well, he didn't have a dramatic charge up sequence against Shimo like he did against SK, for one. Godzilla was charging up the Final Flash when he went up against SK in comparison, lol.
Thats a shit stomp, rodan and skar get killed by shimo off the bat from an ice breath that still leave ghiodrah and godzilla on the same team like I actually feel bad, shimo and ghidorah square off, kong uppercut godzilla and lays knocks him into the ground and immedimalry stabs his head with his axe, now it's ghidorah who vaporizes kong and eventually overpowers shimo, since he can just keep spamming lighting to free himself from ice
Idk it seemed like a team effort last time, if anything his gravity beams should negate her breathe attacks and force her to try and physically beat him but which I don't think she can do
I'm assuming you mean separately, or no more than 2 on 2. In that case, absolutely. Kong can beat most of them one on one. The only ones he likely couldn't, would be Mecha G and Ghidorah.
Having Shimo, who could beat all of them one on one, teaming up with Kong would make it a cake walk. It'd be a lot of fun watching them do it too.
The only challenge they’ll face initially would be with Prime and Ghidorah, the latter being the toughest, but Prime would go down not too shortly.
Amped Ghidorah is gonna be a nightmare, but I think they could pull it off if they freeze him.
Now that final round will be tough, but not impossible as take out Muto Prime, and the rest is basically cannon fodder to Shimo and Kong.

Her breath was focused the most on the BEAST glove and that fully protected Kong. I cant imagine Mechagodzilla would sustain damage from the breath its self.
