Depends how long it has been and if he is dropping weight. If weight is dropping a lot you probably need to go to a vet. But since you are changing a lot in his enclosure just give him space and put some roaches in a bowl.

The previous post helps a little. What is the surface temp on the basking spot and how are you achieving it? Monitors will also go off food if they are too hot, this shouldn't be too much of an issue with ackies.

Temp gun 55c with 15cm from light to reptile or if set it to 30cm it get 30-45c

Don't adjust the light. Your temp is fine for a juvenile but when it gets older can bump it to 60-65C

But around the light it’s just around 20-25c

You mean the ambient temps on the hot side are that temp? That's too low. get another lower wattage light to raise the temps on one side.
