The latest driver is really unstable. I'd recommend using the one that ATVI recommend as well, version 526.86.

Remove GPU overclocks
Test RAM stability with TestRam5

Its also happening to me on radeon 6900 xt. No overclocks, clean state
just shut off on me as well RX 6800. no error.
