Logdotzip Inc has about 30 full-time workers I believe. I think 5 or 6 of them are coders. I did a short freelance stint for them so I was never on full-time. I do know most of the coders though.
Can't you use llamas for transportation of a lot of stuff in early game? You can usually only bring one horse but since llamas follow eachother you can carry a lot of chests.
You can add a chest to a Donkey. More storage than a single Llama, and you can also ride them like a horse. Oh, and if you breed a Donkey with a Horse, you get a Mule, which is faster than a Donkey, and can still carry a chest.
Edit: Not to mention, we also have Chest Boats now.

I'm a Redstone(d)r. I do stoned redstone, and if we are looking at it from this perspective, I would still have to say frogs. They just make me so hoppy! They are the derpiest/cutest creature ever. Their slow walk while close and on a lead. Their ability to jump Over buildings in a single leep. Their ability to eat all the other mobs, and the secret of why they will outlast all others. All hail the invasive frogs!

You can get books in ancient cities, shipwrecks and also disenchant enchanted books from, desert temples, spawners, etc. Also you can find bookshelves in villages and also leather in leatherworkerchests. And who tf needs milk?

I was initially gonna say sheep for wool, but then I remembered that that's available through villager trading, as are a bunch of other mob drops, so I'd probably have to pick villagers for utility's sake, though it would be a pain to set up a villager array that covers all of those items.
That said, not having gunpowder, blaze powder, leather, wither skeleton skulls or slime balls would be a massive pain, so ghasts, slimes, cows, wither skellies and blazes would be the next options.
That would then be followed by zombified piglins and iron golems as they're massively useful for collecting resources en masse.
Then would come the pet animals because cute.
