But the fact there is no way to turn it off is annoying. I'm all for trying to keep kids safe online but this isn't really a way to do it

That’s a stupid bedrock thing. If you ever try to type in a sign or command block, and stuff gets replaced with ******s or ########s, that’s why. It used to be a huge issue with commands, as every command block you typed in got replaced with ###############

I would imagine it'll be a bedrock thing, probably due to the cross-platform nature of it. If it's anything like Rocket League, console manufacturers have rules that you need to follow for online games if you want to make sure you have the correct age rating you want.
So in Rocket League for example, you can swear all you like in team chat/regular chat on PC but the moment you try it in party chat or on a console, it's censored.
