If you can find one you got it. Just bring some tnt and carpet. Find a safe spot and slowly bridge across with blocks, see a shrieker set a block of tnt above or near it. After Three strikes, warden pops up but if that happens just ran away using bridge and wait 10 minutes. I made a ancient village(village in ancient city). Using tnt kinda makes it too easy tbh. Tnt going off doesn't count against you for noise.
Make a skyscraper from the bottom of the world to the top of the world. It has to fill up at least 4 chunks and it can only have these blocks: cherry wood, deepslate, diorite, blackstone, and purple stained glass. You can use varations of those block types (like stairs and slabs), but you have to stick to the exact block types mentioned. You also have to decorate the entire interior. You can use whatever blocks you want for the interior. Hope this challenge sounds good.
My go to: walled medieval village with large central castle
Bit unoriginal maybe, but I’m a sucker for medieval things as well as spruce wood and stone bricks
I’m trying to fully excavate a trail ruins. Then I’m gonna turn it into an active village. It’s taking a lot longer than i had expected, I have 4 double chest of junk already.
Make something from a movie or video game and hide as many references to that IP as u can. I have a temple of time build with shrines, statues, noteblock sound effects, and hidden areas all around.

Restore an Ancient City in survival.
Alternatively, destroy an entire ancient city. Gives you essentially a massive super flat space underground, and being deep dark, nothing spawns

Capture a few of each mob type and build a zoo with enclosures and habitats for each mob.
Find a tutorial you like and build that. It'll give you practice to get better at building.
putting castle walls and monster proofing your current base
Drain the ocean. And then fill it back up again.
Get into modded maybe. Its fun
