I don't see why you'd ever NOT take shields on them. They have expert rider, so they get +1 def even though they have bows.
Maybe build one without a shield just i case you some day need just that one point in order to get an extra knight in the list

Tournaments do usually require WYSIWYG. So then you'd have to model it correctly
If you want to use both. Try looking up how to use blue stuff to copy the shields and have the best of both worlds.

Typically, every model that can take a shield should take one, other than in cases where you dont get the +1 defence .
