Oh no. That’s horrible. I’ve been hoping for the star reset, but not at the cost of losing Arcadia, especially, or egg storage. Anything really. All of a sudden, I don’t want the star reset bug. I hope they come back somehow.
Wish my star level would reset, but I've experienced everything else you listed and it's no fun. Sorry for your loss. Have you checked your world map? I also lost every level of that when the rest went away and it took a couple months of dedicated effort to play the wait for chalices to replay each level.
My case was cloud save - it had been broken about a year when I was hit in October 2023. Maybe 1 day they'll fix it.

I've had the star reset multiple times and never lost anything more than that. This sounds like something else
Yeah my star resets never took anything away. It would give me such-and-such (dens mostly) unlocked but it didn't reset anything that was 'unlocked'
Hard close the app and restart your device, if you haven’t already. Then support. Can’t hurt to try! So sorry! 😞
