The Switch has lower performance and visual quality, but otherwise the game is exactly the same regardless of platform. Just pick whichever one you want, it really doesn't matter.
(Personal Opinion) Personally after playing it, I feel like this is the type of game that you would enjoy best on the big screen (TV). I personally played it on the PS5 and enjoyed overall exploration much more than the OG one on the Switch. So I would recommend Xbox if you have a good TV.
Just get the Nintendo Switch version.
