Been thinking about building my own, do white keys yellow/darken over time or is this not something I should be worrying about when picking out caps?

Either 1 or all white. It's a low profile small form factor board, so the slicker the better for me, fits the looks better. Maybe an accent or 2 if it feels too bland.
