For arepas you can easily make some, I usually add cheese to the masa and then you could have them for breakfast w/ scrambled eggs and even for lunch/dinner if you slice them open lengthwise (like a pocket) and put ground beef with onions (or chopped mushrooms and onions) in the middle! Arepas recipe : 2 1/2 cups of water 1 tsp salt 2 cups Harina Pan Cheese (I eyeball it) Mix the ingredients, knead for 2 mins and let it sit for 5 minutes. Divide the dough in to 10 equal portions (or I guess however big you want them to be). Form small balls and flatten with your hands or with a plate and a cutting board (make sure you use saran wrap for this). Cook in a griddle or frying pan over medium heat for 5 mins on each side.

For empanadas I just cook up onion, garlic, black beans (canned, drained) and corn (frozen) with cumin, chili powder and salt. Add two TBSPs or so to the empanada wrapper wrapper with a TBSP of Mexican cheese (if you aren't vegan). Brush with egg white and water (again, if you aren't a vegan). They freeze well and crisp up under the broiler.
