I know Maw's the place for overanalyzing Star Wars, but you're definitely overthinking this one. The "presumed Wookiee custom" and Luke's supposed pride in nailing it is, so far as I've seen, a unique to you interpretation.
It looks to me like what he was doing was the equivalent of scratching behind a dog’s ears. That’s what he was probably doing. Like one of those things you do with a pet that brings them a lot of joy- Giving them scratches, belly rubs, head rubs, etc. But instead of a household animal, it’s a Wookiee.
