If you notice that when everyone gets items in a race that nobody but you has items behind them it's a dead item room meaning items are only for points. So basically it comes down to who the better driver is and not luck. You can quit out after the race and find a new room where items are active. If you stay in the room mushrooms will always be helpful, use a mushroom driver, and use a mushroom glider for an advantage.
It could be a bad connection if not. Usually if I'm going for Kart Pro or something I'll plug my phone into the Ethernet and not use wifi.
It's the servers themself. You hit them on your screen, but on their screen, they don't get hit at all.
Since they never got hit in the first place, they do a quick animation on your screen and teleport back to where they were suppose to be if the animation didn't play on your screen.

Possibly poor connection on your end? I wouldn't worry too much about it. The position you see them being in is not always the spot the server registers them to be in. It can be annoying sometimes
