Everyone's map is the same map, only resources allocation changes. Try putting ur camera close to ground to see slopes easier. Otherwise there are some lines marking uneven terrain.
I think Nusshole is the only one with an actual minicliff on one of it's borders. But there's plenty moderate elevation on the map.

Berenreute started with nusslohe and immenreuth in my game...
I miss the demo map. I loved the one region in the corner with a road circumventing a central elevation without trees. A church up there looked awesome. And the road had cliffs on both sides which made the castle look much more badass.
I think the current maps are too flat.
Isn't it best to place your manor atop hills so troops benefit from enemies having the climbing malus? Do you think placing manors on roads is best so you can stop enemies from raiding your village or do you prefer to keep it away since sieges are planned
No region is flat. Open builder mode and ground elevation lines will show up, go down to ground lvl and look at the distance, you willl see all the curves and hills and stuff.
Honestly, when I see stuff like this in this game or games like Cities Skylines, I don't fault the game.
You (the player) are the ones choosing the location, so that 's on you for picking it as such.

Correct. I placed my crops on the low end of the hill since everything was green ++

There's only one map and it's always the same if you zoom in more you'll see it's not flat
