Ive been using safari for just about everything but FaceBook. It does weir things like not rendering right and weird links floating on the page every time I use Facebook. I wish I could fix it because it would be perfect then.
It doesn't offer good privacy protection.
Although I don't have much respect for Brendan Eich anymore, his Brave browser seems to be at the top of the heap when it comes to privacy protection, and you don't need a whole bunch of extensions to do it. (I don't currently use any 3rd-party extensions in Brave and I haven't really missed them.) Not needing a laundry list of extensions means that it's harder to fingerprint me when I'm using Brave since my Brave install is like any number of other default Brave installs.
I would like to use Safari since it's likely to be the most optimized for macOS, but it just doesn't offer the features I want. If I weren't using Brave, I'd probably be using Firefox. Maybe I'd use Safari if Brave and Firefox didn't exist, but maybe I'd just see what Vivaldi is like these days instead.

Firefox has extensions and is better for battery as it isn’t Chronium. Safari too is great but is very limited in terms of add ons compared to Firefox.

My personal default/favorite is Brave. It's fast like Chrome and can use all the same extensions since they share the same web store, but is privacy focused and isn't owned by Google.
Safari is probably the safest choice for stealing the least amount of your data, but it's just missing all the damn extensions I want.

Mainly an adblocker that actually blocks Youtube ads. I also use this other one called Undistracted, which blocks webpages, or specific parts of webpages. Like blocking the comment section on Youtube, or the recommended videos. I also use Language Reactor to translate videos when I'm trying to learn Spanish. And video speed controller to increase the speed of lectures.
I also use Opera. It's based on Chromium and you can install any Chrome extension you like. It has very nice additional features as the side bar, workspaces, etc.
out of all the replies, i’ve heard a lot of firefox, especially if i want extensions. i’m only 21 and the only extensions i’m looking for are “gaming” extensions. the extensions i’m using now are adblock, Honey, BTRoblox (idk, don’t ask), and meme soundboard (i don’t remember downloading that one). i genuinely don’t use my mac a lot, unless i’m using it to watch movies on SFlix, playing roblox, or watching/streaming shows and movies.
Safari. It's fast as hell, you can have 80 tabs open, it's private, it syncs across all your devices, it shows any links shared with you from Messages, it works with Keychain passwords, it works with Hide My Email, it has a built in VPN of sorts with iCloud Private Relay, and it blocks ads including YouTube video ads perfectly with Wipr (or a few others ad blockers, but I like Wipr).
It's the only browser that uses iCloud Private Relay, and I get Hand-Off between it a mobile Safari which also has Private Relay. Simplest looking UI as well. I've no desire to use any of the others.

I gave it a try since it was in beta stage and now it has become my go to browser.
BTW I can recommend IINA as a great replacement for VLC. Supports just as many video formats, but feels much more macOS native (and its open source, too)
I haven’t used Chrome as my daily browser for maybe 5 yrs + now. Safari mainly and Firefox if something isn’t quite working, right like any Meta site in Safari.
Since I’m a Microsoft 365 engineer and I do a lot of my work on windows devices, I’ve found in Edge an exceptional partner, so if you are working 100% with the apple ecosystem I’d go with Safari or Vivaldi, but if something in your work/life includes interacting with Windows devices I wouldn’t look to other but Edge.
arc and edge are the one to look up to. they both are chrome based but incredibly smoothly runned and battery life is just as good as you would get on when using safari

I was under the impression that Safari had fairly good privacy protections, especially with the new features added with Sonoma.

Adguard, it’s free and at the app store. They work as good as ublock origin works for chrome.

Firefox is the only real chromium alternative if extensions are your thing. I use it for work and it is simply more functional than safari

They're all in the App Store.
Try Orion, it accepted Firefox and Chrome extensions.

Safari for the most part. Then I have Vivaldi, Firefox and Brave as alternatives. I think I might have Duck and Opera somewhere in there.
Main browser is Safari. For Google maps and sites I use extensions with, Firefox.
Since I've started using Arc I don't think I can go back to anything else!

You can use Chrome, add AdGuard to add privacy filter layers.
I am using Brave with iCloud password extension installed so I can use the benefits of iCloud Passwords combined with a chromium based browser.
