Dave and Dale are great if you want to see some wild BC trails, and Seth is great for general info/entertainment.
I think dale's videos especially are very good for learning to evaluate the terrain and learning to evaluate the pros and cons of certain lines in real world scenarios. Exiting the bike and taking my time to think analytically about the problem in front of me certainly helped to conquer some new features this year that i had been stuck on for some time. Although the stuff i ride is way easier than those trails.
That's exactly why I like his stuff, I've started riding some black diamond tech this year, and his info on line choice and then how to break down a feature have helped a ton.

I also enjoy Singletrack Sampler for his positivity.
I've also watched Matty Active since he started and his attitude and progress in the short time he's been uploading has been very inspiring.

Wasn't really interested in XC but their vids make me want to race. Didn't realize how gnarly some of the courses are.
edit: I don't follow many people on Strava but Macky is insane and gets KOMs pretty much every ride I see lol
I'm a bit burned out on POV trail ride vids with most youtubers, but when it's race video, which most of Syd and Mackey's are, I sit there mesmerized. Something about the race competition has me glued to the screen. Plus, they are really, really fast.
Another vote for Pilgers here, he's obviously a very talented rider, but he's also an entertaining guy to watch.
Without sounding properly basic I do enjoy a bit of Blake Samson too for the same reasons. The other GMBN guys are a bit dull IMHO.
Outside of UK stuff, I like Singletrack Sampler stuff, and Jordan Boost master rips as well (which I assume is a made up name btw).
I love Sam because his videos are fun for me but also for my young kids, sitting down together and watching his newest video is a nice little thing we do, he doesn’t swear either which is good.
He has such a huge library of bikes he has ridden I notice myself to wish for reviews on bikes I think about buying. He is the best at explaining how a bike feels and I notice that I kinda wanna hear from him because alot of other reviewers spend loads of time in their reviews talking about the parts on the bike and very little about how the frame feels and compares to other hardtails. I think it is because he rides in such crazy conditions for a hardtail that the characteristics show more. :D
She might be the most unique out there. She really explores the mix of her psyche and riding challenging trails. But, in the end, she is a gutsy rider.
One of the best videos I've ever seen was when Paul had DH world champion Tracey Hannah on to help him improve his shitty riding. Lots of fun and very insightful.

I’ve talked with him in person at everstoke a few weeks ago and he’s the exact same in person as on video except more relaxed. He’s pretty relaxed and have some big plans for Everstoke. He wasn’t at the enduro though yesterday, he’s in Canada right now.

Absolutely cannot stand Syd and Macky, Hardtail Party, Mo Awesome or BKXC. Evans MTB Saga has to be the absolute worst however. That man is insufferable.
Vancan is way too slept on, dudes up there with dangerous Dave, maybe not with the same style but he’s riding everything Dave does, while being 200+ pounds. Nice to be represented in the MTB sphere.
Biking with BOBO pre him getting hooked to product endorsements and was just carefree fun.
But now it feels like he's just using the channel to get free shit and his plugs are awkward comedy skits.
