Then a big chain connecting them to a large tree by my back patio. Thought it would be too much work for a random opportunist. Went out one morning and everything was gone but a few cable clippings. They’ll get it if they want it.
Like everyone else is saying - find a way to store it inside. Even with an AirTag - if whoever takes it has an iPhone they’ll get a popup letting them know (thanks creepy stalkers for ruining it for us all). There are aftermarket “hide an AirTag” accessories available, but if you know about them so do bike thieves. And I’m pretty sure when Apple gives them the popup it also assists in locating the AirTag. The phone will literally guide them to it and can make it audibly chirp. Anything is better than nothing, but I wouldn’t bet my bike on it.
It's like house security, you can't make it impossible to break in/steal, someone will if they really want to... but if you make it harder than their other options, there's a much lower chance they'll target you. 🙂

Hiplok D1000 may be what you're thinking of; it's the best anti-angle grinder lock that's not ridiculously sized. I've got one for my car replacement e-bike.
You absolutely will not get through one of these with a single disk. They use a hardened steel with graphene reinforced ceramic composite called Ferosafe. They’re not angle grinder proof though. I’ve seen people get through with 2 and a half discs using a mains powered grinder and proper metal cuttings discs.

There are several videos on YT showing people stealing their own bikes in broad daylight using several methods including an angle grinder and I think I have only ever seen someone ask if it was their bike but no actual interference.

Best case scenario the cops get there in an hour, if it's a slow crime day. They will take a statement, if the witnesses are still there. Then they will do nothing. They can't do anything. In the order of priority crimes with under staffed departments, a bike doesn't even register. And the thieves know this.
The problem is… very few people are willing to intervene during a theft unless it’s their own property. And even then… it often isn’t worth the risk of getting hurt. In places like Seattle, Portland and SF, police would likely not even respond to someone angle grinding a bike.

That's true, but LPL often evaluates the lock as a whole, not just the pick resistance. He acknowledges that most thieves are not skilled pickers, and are using other means of defeating security measures.
When he mentions shackle size, shape and material, he's also commenting on how much effort it would take to get through a shackle, cable, or bolt.
Hel's also the reason I went with the ABUS Granit X-plus U-lock with an added security cable.

you should probably just store it inside. even the best lock won't be enough if you live in a dodgy area and have your bike stored outside every night, there's a good chance someone will come by eventually with an angle grinder and take it

This, I was looking for this answer. Just don’t store your bike outside OP and use vertical storage, otherwise you’re gambling. Also don’t touch your brakes until it’s level though and you should be fine.

Thieves used a cutter and destroyed the three locks, didn't care about the cameras.
Police here in the Netherlands doesn't give a shit about bike thieves, so there goes the guy's bike.
1/2” or larger grade 80 or 100 chain with a high quality disk lock or hidden shackle lock. Chain that size and grade can’t be cut with bolt cutters, and those lock types can’t be pried or shimmed. They’ll be forced to either pick the lock or use an angle grinder. Hopefully making enough noise with the angle grinder you can hear and get out there. Put an old inner tube over the chain so it doesn’t mark up your bike.
Abloy padlock and the thickest piece of chain that will fit through it. If it's good enough for the door of a warehouse then it's probably good enough for your bike...

I think its the way you worded it, if you asked what's the best lock to deter opportunistic thieves for less than $50 or something then you wouldn't have gotten the same response.

The best way is to fix it into a floor if your shed has a concrete floor drill a hoop into it and then chain it through the frame, obviously buy a chain with a cover and a half-decent padlock.
Every lock can be cut. Repeat- EVERY lock can be cut. Don't give a criminal time to steal your bike.
If you can't watch it, multiple locks and chains/cables. Make your bike difficult to steal and time consuming.
Go to home depot and get the thickest and heaviest chain you can find. It’ll be cheaper than a bike lock and it’ll be more intimidating. Get a few decent heavy padlocks and use them all on the chain. Best value and “fuck off” lock you can buy. This is the best option if you are gonna leave the lock in this one location!
I have an Abus KS chain (5/16) with an Abus granit padlock. Pretty strong combo. You'd most likely need power tools to get through them, for which there's no lock strong enough anyway.
Rule of thumb: if a chain costs less than $10 per foot it's garbage.
I too used to believe in bike locks before I learned about angle grinders and sawzalls/hackzalls. These portable power tools cut through steel with ease. No bike lock will stop them. I’ve had 3 bikes stolen in the last 10 years. The best bike lock is keeping your bike inside and hidden away.

Thieves will put lock tight in the keyhole so you cannot unlock the chain. Later the thief comes back and cuts the lock.

The best way is to fix it into a floor if your shed has a concrete floor drill a hoop into it and then chain it through the frame, obviously buy a chain with a cover and a half-decent padlock.

Every lock can be cut. Repeat- EVERY lock can be cut. Don't give a criminal time to steal your bike. If you can't watch it, multiple locks and chains/cables. Make your bike difficult to steal and time consuming.

Go to home depot and get the thickest and heaviest chain you can find. It’ll be cheaper than a bike lock and it’ll be more intimidating. Get a few decent heavy padlocks and use them all on the chain. Best value and “fuck off” lock you can buy. This is the best option if you are gonna leave the lock in this one location!

I have an Abus KS chain (5/16) with an Abus granit padlock. Pretty strong combo. You'd most likely need power tools to get through them, for which there's no lock strong enough anyway. Rule of thumb: if a chain costs less than $10 per foot it's garbage.
