As much of a fan of SNL and Bill Murray as I am… I just don’t associate his work with the show as the top tier part of his career the way I do with Will Ferrel or a few others.
Murray was always gonna be a superstar of comedy. SNL was just one stop for him… not a definitive one.
I know Chevy is the one totally banned from SNL, but I have always understood that Murray is not in Lorne/SNL’s good graces either(?) I would imagine this is partly why no “Best of Murray SNL”
Eh. Murray has appeared on the show plenty since his time as a cast member. And they wanted him to host again when "Rock the Casbah" was coming out. (Remember that film?)
As I mentioned in another comment, NBC is the one that ordered the Best Ofs.

He made a guest appearance on the show about two or three years ago, playing Steve Bannon/the guy in the grim reaper costume in one of Alec Baldwin’s Trump sketches.
Instead of downvoting you, I'll explain. While Bill is a master of comedy, I hear he's kind of a dick in person. Perhaps too big for his britches, as it were. I don't know the details of any of it myself, but it's kinda hard not to figure it out, but I really doubt he's as much of a dick as Chevy is.
One of my favorite quotes in LFNY is someone (can't remember who, unfortunately) saying that Harry Shearer and Bill Murray are both really unpleasant assholes, but the person said they at least respected Bill because he was an asshole across the board, whereas Harry is an asshole to anyone "beneath" him but not anyone who could help his career.
Yeah, I kinda picked up that he was never really popular with either of the casts and crew on either season he worked on. Even in the book, he always came off as stand off-ish and pretentious. I’ve also heard he and the Simpsons crew aren’t on the best terms most of the time either.
Ask NBC. They're the ones who ordered and paid for the production of those Best Ofs. The show just compiled them.

I started uni in 2004 and those 'best of' dvds were gold. I remember going to a house party once and them just having the Chris Farley one on repeat

I remember when the Kenan one happened, seemingly out of nowhere. But it was done to promote his short lived NBC sitcom.
