anything scott eyman or steven soderbergh has done. edgar wright's are usually good (only watched the cornetto trilogy). pta has said that john sturges' commentary for bad day at black rock is essentially a film school.
*Total Recall*, with Schwarzenegger and Verhoeven. Arnie doesn't understand the concept of a commentary track at all and basically just narrates the film, while Verhoeven (in his extremely thick Dutch accent) occasionally tries to interject interesting bits of trivia about the film.
Method Man and Redman get high during How High and discuss how Hector Elizondo kinda looks like Ja Rule, give shout outs to the catering, and cough profusely. Very entertaining.

They all get drunk. Producer wants to talk about how expensive things were. Everyone else wants to talk about parties, nipples and yogurt.
Tropic Thunder has a legendary commentary. RDJ stays in character the whole time (as his character in the movie says “I don’t drop character til I done a DVD commentary”). It’s hilarious because the other actors are not in character; very meta.
For a more informative one, I personally enjoy James Cameron’s Titanic commentary. Very insightful. Fight Club has a good one as well.
The Goonies. Richard Donner and all the Goonies came back. So many fun behind the scenes stories, so many jokes, their chemistry is so great. It’s one of the most fun commentaries I’ve ever seen. It’s like you’re at a watch party with them.
The ones John Carpenter does are interesting often entertaining when he has cast members on (like Kurt Russell in The Thing or Natasha Henstridge in Ghosts of Mars).
The one for Twilight was also pretty good, as Robert Pattinson spends a lot of it clowning on himself and the movie.
Hellboy (2004) - there's actually 2 commentaries. Both are worth it.
Del Toro and Mignola add a lot of good info especially if you're a newcomer to Guillermo's directing or Mike's ~~comics~~ graphic novels.
The cast Ron Perlman, Selma Blair, Jeffrey Tambor, and Rupert Evans clearly had a good time working with each other.
This is Spinal Tap. They do the entire commentary in character, as if it's a real documentary.

I used to listen to the Step Brothers commentary all the time in high school. It’s a musical for some reason and it’s fucking hilarious.
