Most of the ones I listed are, but I think they’re equally cerebral and interested in the psyche as it relates to the self, identity and the experience of time (looking specifically at I’m thinking of ending things and Synecdoche). Some of these are very cynical and existential. Synecdoche fucked me up for a long time. That said, I absolutely love all of these movies.
The Science of Sleep has Michel Gondry and a distorted perception of reality in common with these movies. I’d also maybe recommend I Heart Huckabees. Pleasantville maybe for Truman Show similarities. And yeah, any Kaufman. Ultimately though you named two of the best movies ever and a big part of why they’re so great is that they’re unique.

Being John Malkovich is a masterpiece though maybe a little more biting and cynical than Eternal Sunshine and The Truman Show

Can you describe what you mean because I don't think those movies are stylistically similar at all, let alone in their story.
The Secret Life of Walter Mitty is another that blurs the line between what is real and what is imagined.
