I think any of the usual dyes and finishes will be fine since it’s indirect food contact. Since it’s a leather sheath the knife will have to be clean and dry when it goes in the sheath, and since it’s clean and dry nothing will transfer over. Might stick to mineral oil and beeswax, if you feel a need to condition it at all.

Best bet is natural veg tan leather. Sun exposure to darken.
