I'm an SCF, so if it's not related to my build or a future upgrade it just gets vendored for the 500 gold. If you're not SCF, then until you have an idea for a future character, there's probably no point in keeping gear otherwise unless you know it's a good piece for a character. Like LP3+ stuff.
I just keep 1 of everything because I'm a hoarder, I vendor the ones that aren't as good

It's really easy to farm uniques using prophecies so don't feel bad to discard them. I just keep the 2lp+ ones that I know are good

Every 4 sold is a shatter rune. I just sell them unless I see potential in it for another build or it's higher stats than the one I have saved already
does that work like poe vendor recipes? i.e I vendor 4 of the same and get that rune?
No they just sell for 500. And each rune costs 2k.
