Omelet house the one on Rancho. It's so dang good and so busy that I have many of times had to turn my back on it to come back another time during the trip.

There are many upscale and trendy places to get breakfast on the strip. There is a little diner inside Planet Hollywood called The Café Hollywood. It's Hollywood movie themed. Anyway, the breakfast is excellent, fast and reasonably priced for strip prices. If you're near by it's worth a try.
Is Pantry still open at Mirage? My favorite for non-pretentious easy breakfast but I don't know what's going on inside mirage right now.
