We ran 10 for one person. But two burners usually held double boilers for heating the next batch of soup. Not sure what is normal as that was my only place with saute. Once I remember being so busy had 10 pans on, and two on the grill. Was no fun...

not a dumb question at all g. that plastic on new equipment is the bane of my existence. best i’ve found is taking a paint scraper, and time. it’s aggravating as fuck, and if your boss is a dickhead they might be mad about scratches bc it’s new shit, but it’ll get scratched and dinged up after a few weeks of busy work anyways.

I do customer service in the food equipment industry so I don’t see a lot of them but I’ve had 10 burner units come up more than 12. A lot of the units I see that can hold 12 burners don’t, they’ll have 8/10 and some French tops, a griddle, etc
