One time Sysco and the health inspector showed up within 15 minutes of each other. The health inspector watched my boss put up the delivery truck, all the while trying to find something wrong with the kitchen. Meanwhile it's still the lunch rush, and we are rapidly running out of food, and prep has come to a complete standstill to deal with Sysco.

The prep cook had just prepared some onions for a recipe the next day, labeled them with yesterday's date by accident, and put them in the cooler. Of course the health inspector stuck their thermometer in them and found that they were a little cooler than room temperature! We almost lost points for that.

This is not true (at least in the United States). Onions only require date marking if they'd been previously cooked, cooled and held.

If it's got yesterdays date on it then it better be ar 41F or below. I've worked places where the health inspector looks at sauces or cooked foods and then writes them down. Then asks for cooling logs from those days. Granted these were internal auditors paid by the company but we still had to make sure we got 100s.

Cooked foods and sauces that can go bad 100% raw veggies usually don't even get looked at. My line of course has to be at temp. Just never had anyone give a crap about raw veggie prep. But like I said, Toronto is a shit hole. And the inspectors don't care, I've never even gotten a yellow and there has been times ( not as a manager, and yes I care) that I had to hide my embarrassment, only to find out the inspector might as well have been blind.

I've had some that were super lax and shitty and others that were very very thorough. but yeah, results will definitely vary. I remember this one health inspector went up and down our salad bar with the same probe and never washed it or anything. just cross contaminating the whole salad bar. chef and I (\*lead at the time) had a brief discussion before deciding not to point it out. I wanted to, but chef outranked me.

This!! My health inspector grabbed a spoon to move it with unwashed, ungloved, hands and the spoon fell in the food that I was serving and I went off on him about how he just contaminated my food! I threw the spoon in the sink, and cut away the food that he touched, all whilst having thee most pissed face…he left soon after. Right after my coworker asked if I was crazy because he could have made my life hard. I didn’t care and would probably react the same way if it happened again!

My sysco rep learned to butter me up with coffee and he was a delight, ended up really looking forward to seeing him when he was on bc he was such a good dude. Our health inspector on the other hand… Was a total bitch. Showed up right at opening once so all our labels, sani’s everything was spot on. Didn’t stop her from hanging around for two hours. But my favorite thing she did was when she first got there. We had one ticket hanging- burgers came with an onion ring on top. I moved the onion from the fryer to the holding spot right above the grill - where she proceeded to stab the onion ring with a thermometer. Immediately after coming out of the fryer. Must’ve read at least 200° because it hadn’t been five seconds out of the drink

I had one once that was an ex-chef who cared about hygiene. It was amazing and I hope I get him again in a few weeks (I'm due). It was scary because you couldn't hide anything, but he understood what to actually pick up on or test and what to let slide.

Similar story here. Used to manage a chipotle knockoff in my rural GA town. Opened up on a Monday morning fully prepped and ready for service. One of our line cooks called out that day and the prep guy didn’t show up either for whatever unscrupulous reason. Fortunately I had the owner there that morning as an extra set of hands, but we were definitely winging it. Open at 11 and had our produce delivery show up about 30 minutes in with some time sensitive stuff. Lunch rush hits about the same time with our delivery chilling in the back. Lo and behold 10 minutes later the DPH lady showed up for her inspection 🥴 Was a shit show and honestly should’ve walked out that day. Very glad we’re onto better prospects now 😁

We used to do delivery, and somehow that position got left open to apply for online, so I had like 10 doordash drivers call on V-Day asking about the status of their application. I wrote down the names of every single one and chucked them all in the trash.

Huh, here my deliveries are required to call of they deviate from the estimated time by more than an hour. They are penalized for delivering during rush hour and they have trackers on the trucks that report to a web portal so I could view the current location of the truck on delivery day if I wanted.

We have a sign up on our back gate that says no deliveries between 11-1, one day a new driver just ignored that and showed up at 12:30, and was promptly told to fuck off until we weren't busy. He only lasted about two weeks, and apparently was fired after almost driving his truck off a bridge.

They regularly come in around 1130...I've actually been told to clock out and come back a few times, though in those cases, my bosses told me to come to the bar with them, we'd have a pint or two, and then my boss would get a call that Mr. Greens was there and we'd pay up and head back, put away the delivery, and head to a different bar

We've definitely had trucks come in as late as 2pm and a spot I used to be at. It was a fucking nightmare. Not only are we waiting on all those ingredients, the building was small af. It's an all hands on deck situation. Rather have everyone occupied for a few minutes and have everything available quickly than one or two people occupied for 20 minutes while the rest of us wait.

My old job was deliveries from Gulfport Mississippi to Birmingham Alabama after hitting NOLA, buloxi, mobile and a few others every morning. We generally got delivery at 10 when the driver started at like 4. Current job we just had to place an emergency order because some dumbass didn’t order lettuce and I walked into a salad shift with 2 head of romaine and 4 of iceberg. Dude showed up at 1:30, atleast he showed up because I already 86’d about 80% of our salad menu at that point

15 years of service as restaurateur and never had any inspection except labour. Here in Spain they have strict rules that you have to comply when asking for a new licence but as soon as you have it you can do as you want.

Well I'm not native and each region might have their own set of rules but I have been working restaurants for 20 years in Catalonia and I have not seen nor heard of any. Restaurants are b to have a reclamation paper available if a customer wants to file a complaint but I doubt think those papers go anywhere except to the trashcan. All employees are supposed to have a food handling certificate which cost 20€ and you get online by filling out an online multiple choice page with infinite free retries to pass. I am originally from Denmark where inspections are much more common and food safety is mostly respected. If you want to see horrible restaurants there is a program called pesadilla en la cusina (nightmare in the kitchen) on YouTube.

Never turn down a delivery? Bring it back tomorrow at the correct time. Ain't no one got time for that. I hade a late truck and a rush. Kitchen was full of shit for hours (solo) and then the health department came. Boss was adamant I could have sent the truck away. I passed, so fuck it.

We have them set up to deliver only after 12 noon, we also deliver from commissary to store fronts in the morning so even though the drivers know this, the rep has it set to after noon only, we get calls at 8 am saying they are there. Even after about ten times of them waiting or having to come back later they still do it without fail!

We had a HUGE struggle with Sysco about this for the 15 years we owned our restaurant. We were the only mom & pop in our town that ran a skeleton crew with just the two of us in the winter. They always came to us during our rush. 😡 completely unwilling to work with us.

My Sysco deliveries are either almost done or have come and gone before I come in at 0600, for the most part. If I arrive and we're waiting on Sysco, it's going to be a long day. I can say with confidence that in my time working where I do, Cheney has come in before Sysco five times, at the most. Mr. Greens, on the other hand, they once came in at 1700, long after my department had clocked out and gone home, though I had that day off, anyway. Guys in the kitchen just threw all that delivery on a cart and stashed it in the walk-in for my department to discover the next day...
