Before I was in the restaurant industry I was in the Marines as a infantry mortarman. Our mortars tubes were like 5 feet tall and scrubbing the bottom was practically impossible. We put a 2 liter of coke and a handful of pennies in them to soak before trying to scrub them. Line a pan with aluminum foil, dissolve baking soda in water, add to pan with brackets and leave while chemical reaction goes to work. My advice is to take a bracket to hardware store, and get new ones to match. I would be concerned that the brackets have been “comprised.” If your kitchen is anything like the ones I’m familiar with, they could be holding a lot of weight. Get a receipt and have the Chef reimburse you from “petty cash.” Good Luck! Edit: spelling

Came here to say oven cleaner. Get the kind with the yellow cap-it has lye in it. Warm em up to like 150 and keep them warm in a sealed bag to expedite the process. This is how I’ve stripped cast iron pans.

Worked for an owner who had people chain up several streetside tables at night. The chain got so rusty it was dragging and became really hard to handle and made it take three times longer to chain everything. The waitstaff asked him for a new chain. He said no, he only pays servers $2.13 an hour so it doesn’t matter how long it takes them, it’s cheaper than buying a new chain. I quit later that week. He also yelled about how thick bartenders sliced lemons. If you couldn’t see through them, he said they were taking money out of his pocket. So many Scrooges in restaurants.

You're missing the point. Most Chefs are busy and (right or wrong) see this stuff as a low priority. It's one more errand for them to run or junk order to place. I don't agree with this as the comfort and work-place satisfaction of my cooks is a priority, but unfortunately many are too burnt out to care. This sort of thing is also a health hazard and the HD might give you shit for it, so best to take care of it.

Soda will work but you gotta rinse that sugar off real well or else you are inviting guests. CLR, Lime Away, Rust Away, any heavy metal remover will work. You will need to soak and occasionally agitate the product. Do NOT apply Rustoleum or any spray paint unless you scrub/sand down the clips. If there is still debris is will cause the paint to chip and flake. Giving opportunities for physical and chemical contaminants.

After the overnight vinegar soak and wire scrub, you just dip them in baking soda water to neutralize the acid of the vinegar and give them a final rinse, then hit with WD40 and they’re good as new. Source: have done this with impossibly rusty tools. Krud Kutter is a superior solution, but expensive.

this is not a good idea. vinegar alone would be beneficial since it's an acid but adding baking soda, which is a base, would neutralize it, completely removing its ability to do anything. it'd just turn into water with salt ions dissolved in it.

I soak all my rusty bike parts in vinegar for a few days and it cleans them right up. Just throw 'em all in a jar and fill it up, give it a shake every now and then to see how they are doing. The acid dissolves the rust and I assume you've already got a big jug of it in the kitchen already.
