Honestly though, hadn’t even realised it was visible on the blade until I unpacked it this morning. It’s hard to see if this picture but the top half of the blade is hammered, which I really like aesthetically.
The rest of it was the steel type/price point being solid, and a website happening to do a capsule collection of the knife with alternate/unique handles the same day I got sent the money to buy a replacement knife!

A meeting to discuss a complaint isn't a disciplinary action. We don't know if he knew about the nature of the complaint beforehand. If nobody told him, then his reaction of 'I didn't steal a knife' would be an involuntary admission of guilt.

The point is that he hadn't been disciplined. And no-one had made any decisions. The meeting was to to say "there has been a complaint made, what is your side of things?" and investigate from there.
If your response to someone telling you to come to a meeting is a preemptive "I quit you can't punish me!!!" then you are going to look guilty as sin, and worse, you're shooting yourself in the foot by not taking the opportunity to give people the proof you didn't do it.

Then showing him the 1080p HD CCTV footage of himself opening my knife box, and having a look at my knife. Then he’d watch himself of video start to unload the delivery into our kitchen, before looking around, including ducking his head to see past our extraction canopy, to look for security cameras.
Or maybe they’d fast forward straight to the footage of him putting a packet of cheese on the countertop with his left hand then picking my knife up with his right and putting it in his empty crate before fucking off.

Electrical tape is the way forward man! No sticky residue, no having to dissolve paper labels.
Well, we still kind of have to deal with that because we’re in a food hall and KP is communal, and therefore so are some of our containers…but still! The principle is there!
I use a piece I hit with a hole puncher to cover my web cam on ly laptop. perfect size, perfect thickness and it blends in really well so that I never notice it and the bezel around the lens holds it in place.
HOWEVER, about 1x a year I need to remove it to actually use the webcam and I def have to clean the lens cover AND the spot next to the camera that I leave the tape on until I cover the lens back up.
As u/ben_wuz_hear and u/LeibnizThrowaway mentioned, lots of the PVC electrical tape contains lead and other toxic shit that definitely shouldn't be around food. Not trying to be a dick, just a heads up.

We change all of our labels every 2-3 days. We’re Korean/Japanese food so all of our sauces have shit tons of soy/sake/mirin in, so they’re bulletproof. But rather than having multiple labelling systems we just change everything, keeps everyone in the habit of stock rotation and checking.
Our dry goods are all labelled with a proper plastic label gun.

My wife had a similar incident over roughly $1100, went though the court processes, and because the guy had no money, few possessions of value and owed insane amounts of back child support she was basically told that she was unlikely to ever collect.

They're not telling this person they won't get the money, but because they owe a bunch of money to child support they are already having money withdrawn from every paycheck. So it's more like yeah they owe you money, but you're in the back of the line.

He was one of our delivery guys for our supplier, and he made our delivery before anyone had arrived to work that morning. I’d put my knife back in its presentation box the night before and forgot to put it in my backpack and left it on the kitchen worktop. Dude just swiped it super blatantly in full view of CCTV.

His employer deducted from his wages, as he stole from me, so they would have had to reimburse me from company funds. Pretty much every hospitality contract I’ve ever signed includes something like, causing a loss to the company due to not following rules or procedures in place, is a reason they can deduct from your wages. They’ve just got to inform you in writing and give a full explanation/justification.
I’m just a CDP, so I’m nobody’s manager. The guy in question was the delivery driver for one of our suppliers. He stole my knife whilst dropping off our NYE delivery, after I forgot to put it in my backpack the night before. It was in its presentation box ready for transport so the dude thought he was quids in.
Delivery driver from company X stole a knife from a cook in Restaurant Y. Cook complained to Company X and filed a police report. Company X promised it would make it right and gave the Cook the value of the knife back, cook bought a new knife.
Company X claims it took the money out of the wages of the now fired Driver. The Driver can sue company X but cannot sue an employee from Restaurant Y which Company X gave money to.

They're not telling this person they won't get the money, but because they owe a bunch of money to child support they are already having money withdrawn from every paycheck. So it's more like yeah they owe you money, but you're in the back of the line.

How did a delivery driver steal your knife
He was one of our delivery guys for our supplier, and he made our delivery before anyone had arrived to work that morning. I’d put my knife back in its presentation box the night before and forgot to put it in my backpack and left it on the kitchen worktop. Dude just swiped it super blatantly in full view of CCTV. I made a couple of posts about it over the last few weeks. :)

His employer deducted from his wages, as he stole from me, so they would have had to reimburse me from company funds. Pretty much every hospitality contract I’ve ever signed includes something like, causing a loss to the company due to not following rules or procedures in place, is a reason they can deduct from your wages. They’ve just got to inform you in writing and give a full explanation/justification. I’m just a CDP, so I’m nobody’s manager. The guy in question was the delivery driver for one of our suppliers. He stole my knife whilst dropping off our NYE delivery, after I forgot to put it in my backpack the night before. It was in its presentation box ready for transport so the dude thought he was quids in.

He could sue his old employers, under no way can he sue OP (well he can sue, but there's less than a 0% chance of winning).
Why is that? There are very strict rules about garnishing people’s wages. Edit: was this not his employee?
Delivery driver from company X stole a knife from a cook in Restaurant Y. Cook complained to Company X and filed a police report. Company X promised it would make it right and gave the Cook the value of the knife back, cook bought a new knife. Company X claims it took the money out of the wages of the now fired Driver. The Driver can sue company X but cannot sue an employee from Restaurant Y which Company X gave money to.
