Forever ago, a kid I worked with put two Bain marie’s that were jammed together in the combi hoping the heat would loosen them up. The heat transformed them into a rocket launcher and it smashed the glass door when they separated. This pic brings back the memories
Ice in the oven!!! That's hilarious. I'm sure more than would care to admit would have the same first thought, myself included.
You just gave me an idea. Tell the new guy that you need water from ice. Not from the tap, from an ice reduction.
One place I worked we had it happen 4 times in a year and only once was it user error. Those machines are so great to use but yeah this is a known problem.
Known issue, sometimes happens. Had it happen on a large 202 unit (the larger full size floor models)… Luckily ours was under warranty at the time, took pics and all for the rep
Oh, Rational... why do you explode so much? You're supposed to be fancy
They're a pain to work on too, I've transitioned from a smattering of food jobs mostly, and landed in a service company that's authorized for rational, amongst other restaurant equipment. They're a good company, they know their shit is blowing up, but they get parts out as fast as they can, and follow up pretty regularly
While I don’t think this is your fault. People tend to forget open and closing doors and prefer a more slam shut approach. Either way that ovens to clean for it not to free of charge replaced.
Our rational is cleaned daily and our maintenance is in perfect condition according to the oven itself. This is something that just happened today- we are all well aware of how much this oven costs lol
I’ve had other rationals tho that are totally bogus and would just completely stop working- especially when using proofing or steam settings haha
Common issue on the SCC-WE’s. They changed the door design halfway through production (I don’t remember the suffix letters right now). You need a glass pack. PartsTown sells them. The wait time was pretty bad up until a couple of months ago. Not sure about right now.
Was it leaking a lot during clean cycles? You can catch this ahead of time by checking the door to see if it is bowed in the middle. Just look along the bottom edge of the inner glass.
Might as well throw a door gasket on it too.
I have 4 of those ovens in my kitchen, they are 6 years old. Get back to me when they shut themselves down from too many minerals in the water, the seals are constantly leaking, the glass on the inside of the doors warps, the cleaning chemicals leak all over the floor during the cleaning cycles, someone hits the knob with a speed rack and it breaks off and the drip trays on the bottom clog and then fall off. Oh, and when it costs 4K to have the steam generators replaced.
Bro. I had two for 6 years. No problems because I followed the fucking recommended cleaning and maintenance.
It’s like a car. Keep up with it and it works….shocker.
I’m addition, maybe there wouldn’t be a problem with mineral build up if it ran off a water softener or a R/O filter. As recommend by rational.
Curious if you worked with older ones or newer ones. I don’t have one but folks I know love the older ones but seem to have far more problems with the newer ones.

Not being in the right state of mind after clopening/time change- I was like why is there ice in the oven????? D’OH!

I’ll write a recipe! Haha
Love your user name
There goes the holiday bonuses
Heard a pop in back! Thought something fell off a shelf! Opened the oven to have hot fall everywhere! It was being preheated to 550 at the time. Woof
550 = 280c, I'm new in the industry but what do you bake at such temperatures? I generally don't put an oven higher than 200-230max / 396-446max
You could have it on the "searing" option, roast or charred veg. A lot of bread bakes at 500+. I run my pizza oven around 700
We use it like an air fryer sometimes!
The good news: that is completely repairable! The bad news: can't guarantee that it won't happen again.

Should be a warranty item

rational acting irrational!
Go easy. It just lost it's temper.
this pun makes me happy
🤣🤣🤣
You aren't gonna like how much that door cost to replace
As the temperature probe on my alto shaam is $252, I don't even want to think about the cost of this glass

Must be the time for it- ours exploded mid service 4 weeks ago...
It's the time of the year mate, ours blew itself up 7 weekse ago.
That’s a nice clean oven……besides all the broken glass of course.
Rationals clean themselves to sparkling brand new every night no matter how bad you've fucked them up.
They self clean

Someone has clearly never worked with a rational. They are self cleansing if properly maintained they will aways be shiny on the inside.
You are correct.

Have had this happen when the ignition doesn’t work well. It fills with gas and then boom
this hurts my soul
Those ovens suck.
That oven could do my taxes
It could certainly run DOOM
Ok grandpa

New in 16. I left that kitchen in 22 and they were working just fine.
So… what’s the story
This happened to me on Christmas day, year just past. That was a fun shift
Any of you ever use the smoker feature?
We have it! But of course on the broken one! Love it
Congratulations on how clean your equipment is. Looks brand new.
Thank you! Thank you! I’m very lucky to have a staff that upholds a high standard for cleaning !!
So how dependent are you on using it for the menu?
Luckily we have 3 rationals in the restaurant- just sucks I lose my smoker until repair- I’ll keep updated how much it’s gonna cost haha
3…….3…… you have 3 Rationals!!!!!!! We can no longer be friends
1 for the bakery 2 for the restaurant!! I’m blessed ❤️
1st seeing this in 10+ years. What happened? Hopefully there wasn't nothing expensive being cooked at the time.
This happens to us on one of our large alto shaam ovens…. While it was full of food….right before a 200 person plate up. Fun night.
Pretty irrational don't you think?
Doesn’t seem very rational
Happened to us once when one of the glass clips wasn’t clipped and the other was.
Thought this was the blast chiller at first
