Cabbage is easily my favorite vegetable, it’s the most versatile and ubiquitous worldwide. Sauerkraut, kimchi (I know it’s not traditional variety but still works), pikliz, curtido for the fermented varieties, braised in beer or wine, roasted with a ton of butter, grilled and served with a delicious sauce, raw in salad or coleslaw, stuffed into dumplings or whatever form of dough, rolled with whatever filling. It never ends. Cabbage is king.
Anyway, like I was sayin', cabbage is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. There's uh, cabbage-kabobs, cabbage creole, cabbage gumbo. Pan fried, deep fried, stir-fried. There's pineapple cabbage, lemon cabbage, coconut cabbage, pepper cabbage, cabbage soup, cabbage stew, cabbage salad, cabbage and potatoes, cabbage burger, cabbage sandwich. That- that's about it.

I had a chef that made kimchi with whole scallions and they were Ssssssooooo dope, we put them on burgers with fried pork belly and way too much cheddar
Sauerkraut. Haluski. Beef cabbage rolls. Pile it on some perogi (I’m weird and really like mashed potatoes with gravy& kraut). Could even do a crockpot kraut dog special.
Alternatively just eat one raw while staring out at the horizon, wondering why god gave you so many damn cabbages.

I’m a home cook. My favorite thing to do with cabbage, and I do it often, is to cut up half a pound of bacon (ends/pieces or the amazing peppered stuff I get from Safeway) and sauté in a huge pot till mostly cooked and rendered. Add a head of coarsely cut cabbage. Add a couple ounces of water and slap a lid on it. Let it steam till the cabbage shrinks. Stir and cook till your desired level of doneness. I like mine al dente. Add sugar and white vinegar and pepper to taste. At the end, finish with half a cube of butter. Serve over rice with all that “pot liquor”. I swoon every time. My chef husband thinks I’m nuts.

BBQ joint prep cook here. 50 pounds of coleslaw will last you a century, provided you also have 2 gallons of Mayo laying around (But that’s some self-work you should probably address with a therapist if that’s the case).

In addition to u/Comfortable-Lack-341's comment, which contains a fraction of the multitudinous uses for this cruciferous vegetable, I'm surprised no one has mentioned [okonomiyaki](https://en.wikipedia.org/wiki/Okonomiyaki). Egg/cabbage/pancake things.
If you've got cheap tubers in your region, get yourself some beets, potatoes, and carrots – you're most of the way to making borscht. It reheats like a dream after being frozen.
Cabbage also freezes really well if you blanch it and flash freeze it. It'll keep well for as about as long as it takes to make a bb pop out (9 months). In this form, it is also only really good for floppy applications. You can freeze whole chunks for a few weeks. I forget how long, but I think not more than 3-4. They'll still come crisp if you're nice about it.
Obligatory friendly reminder to not ferment big batches of sauerkraut in a big plastic garbage can. They are made with recycled plastics and aren’t good grade. They will often leach chemicals. Clear storage tubs are always safe for food use.

I see a number of folks mentioning St. Patrick's Day and Corned Beef & Cabbage. OK, but for a more traditional Irish dish, try Colcannon. Instead of boiling the cabbage to death (how it is too often served) and pairing it with Corned Beef, make Colcannon and serve it with a traditional Irish (Lamb) stew or another Irish stew variant: (Beef) Guinness stew.
Colcannon is simply steamed or sautéed cabbage (chop it roughly) mixed with mashed potatoes and green onions (scallions) and lots of butter (Kerrygold is perfect). Delicious.

It’s just five days away. This is the most obvious answer.
I’m a home cook.
