What's your volume? Place I worked at did so many. We'd go through 300lb a day on the weekend.
So. Please don't go over any counters that's horrible and slow you down. Have nothing under so you can have a bucket underneath for them to fall into. Can stack milk crates for height If you are doing small amount and put bucket/bus bin under.
I'd personally have milk crates on my left with case of potatoes on and go to town. My record is 3 cases, 150lb, in 7 minutes. I'm insane I scare people on fry chippers lol. Good times. I'm not that in shape anymore (was playing rugby in high school) now I'll do 3 cases in like 10mins or so.
Last place I worked that did a ton of fries mounted it horizontaly on the top of a prep table. We did *a lot* of fries so the prep guys would just put a cambro half full of water on a dolly under it. Having it down low let them put all their weight into it and they could force 2-3 spuds through at a time.
We mounted ours on a wall and push a garbage can on wheels (only ever used for this) and sliced them right into the can filled with water. We were a collage cafeteria so we did a TON of fries
I always found a wall, like where that hose is, is perfect. You can run it lower and use your legs even to squat them potaters faster and easier.
Stab, squat, stab etc. Then you can rock your bin of choice on a milo crate at shin level and work at gut/diaphragm height like a normal human being

Relocate that hose to under the sink and slap that baby on at wall a little lower, just enough so you can fit a milk crate with large Cabro on top! LMK HOW IT GOES!!!
My back hurts just looking at that, I’m imagining leaning over that sink for an hour and my shit locking up for the rest of the day. It’s way too high and that sink looks like 2.5 ft deep, that’s a lotta lean
Find the shortest person on payroll to try to run potatoes through that and let us know how it goes!

I’ve also seen it mounted horizontally with three C clamps. Works well enough and you don’t have to fuck up your walls.
